Turkey Burger with Summer Squash

I needed to throw together a quick dinner late one week day night. Because I try to always have a Plan B I had some frozen Trader Joe’s turkey burgers in the freezer- they are ground turkey, salt and rosemary - very “clean”, no preservatives. I also had some yellow and zucchini squash that wanted to be eaten. I sliced up the squash and steamed it while I grated the cheese and cooked the turkey burgers. Drained the squash, threw it in a bowl, topped it with the cheese and tossed on the cooked turkey burger. Topped it all off with the bruschetta sauce and had it all on the table in less than 15 minutes.


Ingredients: (For 1 serving)

Directions:

  1. Wash and slice the summer squash into “coins”. Place in a saucepan with a little water and steam until semi-soft.
  2. While squash is steaming spray a frying pan with olive oil (I use my Misto) and cook the turkey burger according to directions (6-8 minutes per side)
  3. Grate ½ ounce of asiago cheese (or parmesan, or romano, or any good flavorful cheese)
  4. Drain the summer squash and place in a bowl, sprinkle grated cheese over it
  5. Place turkey burger on top of squash
  6. Microwave 3T of the bruschetta sauce (covered) for 30 seconds to warm and pour over squash/cheese/turkey burger

Mangia! Lots of good flavors, filling and plenty of protein.
