Turkey Tacos - In A Bowl Or Wrapped In Lettuce Leaves

This yummy dish is yet another way to use ground turkey.  For your family it can get spooned into taco shells or wrapped up in soft tortillas, for me I like it in a bowl or wrapped in a lettuce leaf.  You decide for yourself.


Ingredients:

Directions:

  1. Mix onions, garlic, lime juice, cilantro and salsa together and set aside.  If you have a food processor you can avoid chopping the onion and garlic and just pulse it all together to a salsa like consistency
  2. Spray a medium frying pan with olive oil spray (I use my Misto), heat over medium heat and add ground turkey.
  3. Cook for around 5 minutes and then stir in the chili powder, oregano, salt and cumin
  4. Add the salsa mixture to the pan and mix thoroughly.  Cook until all of the pink is gone from the meat
  5. Add the chicken stock, bring everything to a simmer and allow to cook for about 2 more minutes
  6. Remove from heat and serve, either tearing off lettuce leaves and scooping in the turkey mixture or simply scooping into a bowl.(or into taco shells or tortillas for the family)
  7. Top with diced tomatoes and avocado and serve
