Turkey Zucchini Burgers with Bruschetta
I am always looking for new ways to use ground turkey since I buy a 4 pack of 20 ounce packages at Costco for a great price. This recipe has been adapted from one I saw on skinnytaste.com. You get your greens, your yummy burger and it is topped with a tasty tomato basil treat. Enjoy!
Ingredients for the bruschetta:
- 1/4 cup chopped red onion
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- Sea salt and fresh ground pepper to taste
- 2 cloves garlic minced
- 2 tablespoons chopped fresh basil leaves
- 3 medium ripe tomatoes
- 3 ounces part skim mozzarella cheese diced
Ingredients for the burgers:
- 20 oz lean ground turkey
- 1 small zucchini grated (about 1 cup)
- ¼ cup seasoned bread crumbs
- 1 clove garlic grated
- 1 tablespoon grated red onion
- Sea salt and fresh pepper to taste
- Olive oil spray for your frying pan
Directions for bruschetta:
- Combine red onion, olive oil balsamic vinegar salt and pepper in a large bowl.
- Chop the tomatoes and add to the bowl
- Add the garlic, basil and additional salt and pepper as needed.
- Set aside
- Toss in the cheese just before serving
Directions for the burgers:
- Remove excess moisture from the zucchini by squeezing in a paper towel
- In a large bowl combine the ground turkey, grated zucchini, breadcrumbs, garlic, onion, salt and pepper
- Form them into 6 equal size patties making them as flat as possible
- Heat a large skillet on medium high heat
- Spray with olive oil spray
- Add the burgers to the pan and reduce heat to medium low
- Cook until browned, about 4 minutes
- Flip and cook another 4 minutes
- Be careful not to burn them
Remove from heat and plate each burger, topping with 1/6 of the bruschetta and serve.
**Note- you can also serve over a lettuce leaf with a thin slice of tomato
