Turkey Zucchini Burgers with Bruschetta

Turkey Zucchini Burgers with Bruschetta

I am always looking for new ways to use ground turkey since I buy a 4 pack of 20 ounce packages at Costco for a great price.  This recipe has been adapted from one I saw on skinnytaste.com.  You get your greens, your yummy burger and it is topped with a tasty tomato basil treat.  Enjoy!

Ingredients for the bruschetta:

Ingredients for the burgers:

Directions for bruschetta:

  1. Combine red onion, olive oil balsamic vinegar salt and pepper in a large bowl.
  2. Chop the tomatoes and add to the bowl
  3. Add the garlic, basil and additional salt and pepper as needed.
  4. Set aside
  5. Toss in the cheese just before serving

Directions for the burgers:

  1. Remove excess moisture from the zucchini by squeezing in a paper towel
  2. In a large bowl combine the ground turkey, grated zucchini, breadcrumbs, garlic, onion, salt and pepper
  3. Form them into 6 equal size patties making them as flat as possible
  4. Heat a large skillet on medium high heat
  5. Spray with olive oil spray
  6. Add the burgers to the pan and reduce heat to medium low
  7. Cook until browned, about 4 minutes
  8. Flip and cook another 4 minutes
  9. Be careful not to burn them

Remove from heat and plate each burger, topping with 1/6 of the bruschetta and serve.

**Note- you can also serve over a lettuce leaf with a thin slice of tomato
