Wild Alaskan Salmon Salad

I like to have my meals planned and prepared if possible.  When I do this I know exactly what I am eating in terms of calories and protein.  In addition, and possibly even more important, I do not wonder as I get hungry, what I am going to eat.  It takes the emotion of, “now this sounds delicious” out of my meals.  That doesn’t mean the meal isn’t go to taste delicious, it just means I am not going to sit and let my mind wander to thoughts and plans of eating which has always been a dangerous place inside my head.  How about you?  My local Costco has small cans of wild caught Alaskan salmon so I bought some to try.  I used all 6 cans in the preparation of this salmon salad and have made 8 generous size servings out of the result. 


Ingredients:

Directions:

  1. Open and drain the canned salmon in a colander
  2. Rinse lightly with water and drain
  3. Place salmon in large bowl and break apart with a fork
  4. Add celery, dill, mustard, yogurt, dressing and any other seasonings
  5. Mix well

That’s it!  Quick, easy, tasty, healthy, and low calorie high protein.  I eat it in a small bowl, or stuff into an heirloom tomato, or toss over some fresh baby spinach.  You can stuff into pita bread or wrap up in a tortilla for other family members.

Note:  You can easily do the same with canned tuna, chicken or turkey.  Vary the seasonings for different flavors.
