Wonderfully Quick and Easy Turkey Stir Fry by Wendy
Our special thanks to Wendy Laborde-Calise for this yummy yet easy to toss together stir fry that ALL members of the family can enjoy.
Ingredients:
- 1 pound lean ground turkey
- 3 cups cabbage shredded and chopped (I would probably use Napa cabbage, but that’s just me)
- 3 cups zucchini chopped
- 1 ½ cups carrots chopped
- 1 cup onions diced
- ¼ cup green onions diced
- ½ cup shallots minced
- 2 Tablespoons Teriyaki or Stir Fry Sauce
Directions:
- Brown turkey and remove from pan
- Spray with olive oil (I use my Misto)
- Sauté onions and shallots until translucent
- Add carrots and zucchini and continue to sauté until they are tender
- Add ground turkey back to pan and mix well
- Add cabbage and green onions and continue to sauté (or stir fry) until cabbage reduced in bulk mixing all ingredients
- Add your favorite Teriyaki or stir fry sauce and mix well and serve
Variations - use sugar snap peas in place of zucchini, use butternut squash in place of carrots or just be creative and add your own veggies of choice. Be sure to adjust the nutritional values accordingly.
