Zoodles and Bacon and Scallops Oh MY!

This was comfort food without the calories.  Full of flavors and textures that all can enjoy, and you will have to agree - bacon makes it all better.

Ingredients:

Directions:

  1. Preheat oven to 400 degrees
  2. Cover a baking sheet with foil
  3. Rinse the scallops and pat them dry
  4. Sprinkle both sides of the scallops with smoked paprika.  Wrap each scallop with a slice of bacon and secure with a toothpick.  Place on prepared baking sheet
  5. Bake in preheated oven for about 10 minutes per side- turn when bacon has browned and crisped
  6. With your Veggetti make the zucchini into “noodles”
  7. Heat a skillet to medium and place the noodles in the pan to cook, turning occasionally until heated through- drain any excess liquid
  8. Add the garlic and continue cooking for about 5 minutes
  9. Add the sauce and the dried peppers and mix and continue cooking until heated through another 3-4 minutes.
  10. Divide the “Zoodles” into two bowls.  Top each with 2 tablespoons parmesan cheese
  11. Remove the scallops from the oven when done and place on top of each bowl of Zoodles
  12. Serve and enjoy
