Zoodles and Bacon and Scallops Oh MY!
This was comfort food without the calories. Full of flavors and textures that all can enjoy, and you will have to agree - bacon makes it all better.
Ingredients:
- 8 ounces Scallops (6 Large)
- 2 Medium Zucchini
- 6 Slices Center Cut Bacon
- 1 cup Trader Joe's Traditional Marinara Sauce
- 4 tablespoons Grated Parmesan Cheese
- 1/4 teaspoon Minced Garlic
- 1/8 teaspoon Dried Red Peppers
- Smoked Paprika
Directions:
- Preheat oven to 400 degrees
- Cover a baking sheet with foil
- Rinse the scallops and pat them dry
- Sprinkle both sides of the scallops with smoked paprika. Wrap each scallop with a slice of bacon and secure with a toothpick. Place on prepared baking sheet
- Bake in preheated oven for about 10 minutes per side- turn when bacon has browned and crisped
- With your Veggetti make the zucchini into “noodles”
- Heat a skillet to medium and place the noodles in the pan to cook, turning occasionally until heated through- drain any excess liquid
- Add the garlic and continue cooking for about 5 minutes
- Add the sauce and the dried peppers and mix and continue cooking until heated through another 3-4 minutes.
- Divide the “Zoodles” into two bowls. Top each with 2 tablespoons parmesan cheese
- Remove the scallops from the oven when done and place on top of each bowl of Zoodles
- Serve and enjoy
